Speedy Salmon with Capers

Total time: 25 - 30 minutes

Ingredients:

  • 2 filet of any salmon (I used steelhead salmon with skin, but it's entirely up to you)
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp of ginger
  • 4 tbsp of capers
  • 1 tbsp of butter, thinly sliced

Directions:

  • Set the oven to 380 degrees F.
  • Grease or line a baking pan & lay the two filet of salmon onto the pan.
As you can see, I first seasoned the salmon on a dish lined with parchment paper.  Later, I just moved it to a pan.
  • Sprinkle the salt, pepper & ginger onto the salmon.
  • Add the capers and lightly press them onto the salmon so they won't roll off as easily.
  • Lay the slices of butter on top of the salmon.
  • Bake for 20-25 minutes. When it's done, feel free to add garnish or more salt, butter, capers, or any other ingredient. It should look something like this: 
Note the color and texture of a salmon not over or under
cooked... under cooked is not healthy and over tastes icky!

Beverages, Snacks & Gluten + Stay Tuned for Brownies

     So, apparently, there are drinks with gluten.  Oh, the joy; yet another thing to cut out of my diet!! Also, tons of snack food fails to GF tests as well... Solution? Know the key ingredients that contain gluten.
     Some of the basics include most caramel color (rules out a ton of soda, ie Coke & Pepsi), condiments (like ketchup, mustard, & Asian condiments. That's a big one), natural flavorings, deli meats (just check all meats. You never know what could be hiding in a strip of bacon), and natural flavorings (which can be found in everything from soda to chips. Oh, flavorings. Why must you have gluten??)

     Anyhow, that's kind of just a little side note of the day... Also, check back for some extreme GF brownies.  I'll post the recipe either today or tomorrow.

     Recently, I discovered that I'm gluten intolerant, which I'll refer to as GF (for Gluten Free. Others use GF or G+, but in case you're new, now you know!) I'll be posting links and recipes all about my GF diet... and hopefully, it will help with yours!  I'll try to post every week, and the goal is to have a variety of recipes.
